Burning Angst Omlette
  • Three large Eggs
  • 1 tbsp butter (cut into two pieces 0.75tbsp, 0.25tbsp)
  • 2 tsp (minimum) Habanero Tabasco
  • 2 tbsp (min.) Habanero Salsa (Desert Pepper Trading Company or Shotgun Willie's work very well).
  • 2 tsp (min) Cholula
  • Ground Cayenne Pepper (to taste).
  • 1-2 handfuls of ground/shredded Mozerella Cheese
  • 1/8 cup of milk.

Mix milk, tabasco, cholula, salsa, and cayanne pepper in any cup or glass you don't really mind dirtying up. Stir with fork. Drop eggs and small pat of butter into the mixture. Stab repeatedly to break everything up, then stir again.

Dump the larger piece of butter in the already greased and preheated pan(set to medium), and make sure it's evenly melted before dumping in the milk, egg, and hot pepper mixture. Dump in the cheese.

Cook as per any other omlette, giving it a good flip or folding (your prefernce). Top with traditional tabasco sauce, and keep lots of liquids nearby.
